Sombra Ensamble is a limited edition blend of wild & rare Tepeztate & Tobala agave, harvested from high in the Oaxacan Sierra. The agave is baked over hot stones and a wood fire, crushed by a limestone wheel, fermented with wild native yeast and twice distilled.
