After this, the wine is transferred with the skins and seeds into stainless steel tanks to begin the fermentation, which takes 7 days to generate the desired color, flavors, and aromas typical of this variety. Fermented a second time to stabilize and soften the wine the wine then matures in French and American oak barrels for six months.
