Papas is an astonishingly concentrated and complex Greek assyrtiko from a single vineyard in Megalochori. Taken from low-yielding 150-year-old vines, the wine spends 22 months on the yeast lees before two months in large Austrian oak barrels. Pithy, smoky and saline, with outstanding length.
